Easy Carob Cookies

Ingredients (for about 40 cookies):
Dry:
2 cups wholegrain zea flour / wholewheat flour
1/2 cup carob flour
1 tsp baking powder
1/8 tsp salt

Wet:
2 flax eggs (2 tb flax meal + 6 tb water)
4 tb agave/maple syrup
4 tb carob syrup
4 tb coconut oil, melted
2 tsp vanilla extract


Instructions:
1. Add all dry ingredients to a medium bowl and whisk to combine.
2. Add all wet ingredients to a large bowl and whisk to combine.
3. Add the dry mixture to the wet and mix with a spatula.
4. Shape into a log about 40 cm, cover with plastic wrap, and refrigerate for at least half an hour.
5. Slice into 1 cm cookies and place on a parchment-lined baking tray.
6. Bake for 12 - 14 minutes at 180°C.
7. Allow to cool completely before transferring to an airtight container.
